While visiting friends in Rundu we ate a delicious one pot chicken meal - prepared by a Bachelor! He put raw rice, frozen chicken and salt and pepper into a pot, on the gas stove; brought it to boil; removed the pot and wrapped it in his sleeping bag and duvet for 4 hours. That was it - deliciously cooked thru chicken, and very tasty, moist rice.
So, on returning home I thought I'd try a version of this - I put a layer of dry rice in an oven dish, a bit of course salt too. On top of this I layered the chicken pieces. To close up any spaces I added potatoe pieces, onion slices and a few vegies. Over it all I poured about 2 cups of water, added a sprinkling of braai salt and fresh herbs. Put the whole thing in the oven on 180, for about 1 hour.
The result - perfect!
